Tomato, sweet onion, and parsley salad

Tomato, sweet onion, and parsley salad

MAKES 8 servings
TIME 10 minutes

Ingredients
2 medium sweet onions (such as Walla Walla or Maui), cut into 1/4-in.-thick wedges
2 lbs. grape or small cherry tomatoes, cut in half
1 can (14.5 oz.) hearts of palm, drained and cut into thin disks (optional)
3/4 cup chopped flat-leaf parsley
1/4 cup fresh lime juice
1/2 tsp. each kosher salt and freshly ground black pepper

Directions
1. Put onions in a bowl of cold water and soak for 5 minutes. Drain.

2. In large bowl, toss tomatoes with onions, hearts of palm, parsley, lime juice, salt, and pepper. Serve with ribs.
