Easiest Wine Dinner Ever - Dungeness and Western whites

A mountain of cracked crab and three decadent dips for the best wine party of the season.

Garlic herb butter

In a small saucepan, melt 3/4 cup butter over medium heat. Add 1 tbsp. chopped garlic and cook, stirring often, until garlic is softened and butter foam subsides, about 2 minutes. Remove from heat and stir in 2 tbsp. finely chopped flat-leaf parsley, 1 tbsp. finely chopped fresh tarragon, and finely shredded peel from 1 lemon. Serves 4.

Saffron mayonnaise

In a small frying pan over medium-low heat, toast 1/2 tsp. saffron threads just until fragrant, stirring often, about 2 minutes. Pour into a small bowl, then crumble. Stir in 3/4 cup mayonnaise, 1 tbsp. fresh lemon juice, and 1/4 tsp. freshly ground black pepper. Let stand 15 minutes, then stir. Serves 4.

Devil sauce

In a small bowl, stir together 3/4 cup mayonnaise, 1/2 tsp. ground coriander, and 1 tsp. hot sauce, such as Tabasco. Taste and add more hot sauce if you like. Serves 4.
